Versatile Spanish Rice

When I was in college and the first couple years living on my own, my idea of a side dish was some lettuce or baby carrots. The first recipe for a side dish I ever attempted was taken out of a Taste of Home cookbook from my mom, circa 1998. I needed a side for salsa chicken (literally salsa put on a chicken breast and baked until done) and this Spanish rice fit the bill.  I’m pretty sure it was the first thing I ever cooked for Landon when we were dating too.

Easy Chili in a Bread Bowl

Chili.  Winter’s comfort food.  I tend to get excited every September when we are on the verge of temperatures dropping.  It means I am only a month away from chili!  I usually make this chili at least once a month between October and March.  It’s incredibly easy in the crockpot and so delicious.  Landon has recently gotten hooked on bread bowls from Panera and my mom found the easiest way to make them at home!  This month I stepped up my chili game and put it in a bread bowl.  Carbo-load and comfort food together.  It’s a match made in heaven.

Easy Christmas Gifts and Edible Coal

At work we have a Secret Santa gift exchange.  It is fun to partake in, but it also means more gifts to buy.  Which then potentially causes more holiday stress.  But I was able to minimize the stress with some clever and easy Christmas gifts.  I also have found the most amazing recipe for making edible coal – seriously so good!  And I made some cute little Christmas themed brownies that could not have been any easier. ?
