Healthy Pina Colada Smoothie

“If you like pina coladas, and getting caught in the rain…”  Well you don’t need to get caught in the rain with this drink!  In fact, sipping this pina colada smoothie will have you thinking you’re on a sunny beach somewhere.  Back to school got you down?  Have a pina colada smoothie!  Realizing you have over 30 years to go until retirement?  Have a pina colada smoothie!  Your coworker Becky won’t shut up about her latest problems?  You guessed it!  Just sip on this and feel the world melt away.

Pina Colada Smoothie

It’s possible the first pina colada I ever had was on our honeymoon 3.5 years ago.  It was pretty much my drink of choice that week and I have had such a craving for one lately.  But I like to drink my blended drinks as breakfast smoothies or mid-morning snacks so rum was out of the question.  Here I played with the ratios to find that refreshing taste that works any time of day!

Ingredients

3/4 cup frozen pineapple chunks

3/4 cup milk of choice (I love almond milk)

3 Tbsp unsweetened shredded coconut

1/2 scoop vanilla protein powder (optional)*

Pina Colada Smoothie

Directions

Put all ingredients in a blender and blend until smooth.  Then relax like you aren’t just on a beach, but you own one too!

*Note on protein powder.  The pineapple is naturally sweet but if you like your drinks sweet, add the vanilla protein powder.  I could only tolerate a half a scoop without being too sweet for me but I also really enjoyed the drink without any too.  Feel free to play around for your personal palate.
